Ingredients for Baklava Rolls (Makes approximately 60 rolls)

For the Baklava Rolls:

  • 1 pack of filo pastry – ultra-thin and light, creating the signature crispiness.
  • 200g finely crushed almonds or pistachios – providing crunch and flavor while maintaining some texture.
  • 125g melted butter – ensuring a rich, golden finish and a melt-in-the-mouth texture.

For the Syrup:

  • 435ml water – forms the base of the syrup, ensuring the baklava stays moist without becoming soggy.
  • 310g sugar – essential for a syrupy consistency and balanced sweetness.
  • 5ml lemon juice – prevents crystallization and adds a subtle tang to complement the honey and nuts.

This combination of ingredients results in baklava rolls that are crisp, fragrant, and deliciously indulgent—perfect for a sweet treat at any time.

How to Make Almond and Pistachio Baklava Rolls

Preparing the Nut Filling:

Coarsely grind the almonds and/or pistachios. They should retain a slight crunch for the best texture and flavor.

Assembling the Baklava Rolls:

  1. Prepare the filo pastry: Unroll the filo sheets on a clean surface.
  2. Butter and layer: Brush the first sheet with melted butter and sprinkle evenly with the nut mixture.
  3. Roll and shape:
    • Place a thin stick (about 1 cm in diameter) along one edge.
    • Roll the filo pastry around the stick to form a tight roll.
    • Leave the roll on the stick and repeat the process with a second filo sheet for double thickness.
    • Gently press the roll to create a crinkled effect, then carefully remove the stick.
  4. Bake to perfection:
    • Arrange the rolls in a baking dish, packed closely together.
    • Drizzle with melted butter.
    • Bake at 180°C (350°F) for about 25 minutes, until golden and crispy.

Making the Syrup and Finishing Touch:

  1. While the rolls are baking, prepare the syrup:
    • Heat 435ml water with 310g sugar.
    • Add 5ml lemon juice and simmer until slightly thickened.
  2. Once the baklava rolls are out of the oven, drizzle them with the warm syrup while still hot.
  3. Allow them to cool completely before cutting into bite-sized pieces and placing them in paper baking cups.

These crispy, fragrant, and syrupy delights are perfect for a sweet indulgence or celebrating special occasions like Eid al-Fitr.

How to Store Baklava Rolls

To maintain their crispiness, freshness, and flavor, follow these storage tips:

At Room Temperature (Up to 2 Weeks):

  • Store in an airtight glass or metal container, keeping the rolls slightly apart to prevent sticking.
  • Place parchment paper between layers to preserve crispness.
  • Keep in a cool, dry place, away from heat and moisture.

In the Refrigerator (Up to 1 Month):

  • If you live in a warm or humid climate, refrigerate the rolls in an airtight container.
  • Note: Refrigeration may reduce crispiness. To restore their crunch, reheat in the oven at 150°C (300°F) for a few minutes before serving.

In the Freezer (Up to 3 Months):

  • Wrap each baklava roll in plastic wrap or aluminum foil and place them in a freezer bag.
  • When ready to eat, thaw at room temperature for a few hours.
  • Reheat slightly in the oven to regain their crispy texture.

Enjoy these delightful baklava rolls, whether as a special treat for yourself or a sweet gift for loved ones!
