Ingredients
  

  • 3 garlic cloves
  • 250 g canned chickpeas drained (liquid reserved), or home-cooked chickpeas
  • 3/4 tsp salt
  • 4 tbsp tahini sesame paste
  • 3-4 tbsp lemon juice
  • 1/4 tsp ground cumin
  • 2-4 tbsp ice water

Instructions
 

  • In a food processor or Thermomix, combine, freshly squeezed lemon juice, garlic cloves and a pinch of salt.
  • Blend the mixture until the garlic is finely minced. Then, let it rest for at least 10 minutes.
  • Add tahini (sesame paste) to the food processor. Blend on medium speed until the mixture becomes thick and creamy.
  • While the processor is running, slowly drizzle in 2 tablespoons of ice-cold water. The cold water helps the tahini emulsify, turning it pale and ultra-creamy.
  • Now, add a pinch of ground cumin, cooked chickpeas (or canned chickpeas, drained and rinsed).
  • Blend on high speed until the mixture begins to look creamy.
  • While blending, slowly drizzle in olive oil. This step adds richness and smoothness to your hummus. Pause occasionally to scrape down the sides of the processor to ensure an even blend.
  • To achieve the perfect creamy consistency, add ice water one tablespoon at a time, blending between each addition. Continue until your hummus reaches your desired smoothness.
  • Taste your hummus and adjust the seasoning if needed. Add:
    -More salt for a stronger savory flavor.
    -Extra lemon juice for added brightness.
  • Blend again briefly to incorporate any adjustments.
  • Transfer the hummus to a serving bowl. Use the back of a spoon to create swirls or ridges on the surface for a decorative touch.
  • Garnish with your favorite toppings, such as:
    - A drizzle of olive oil.
    - A sprinkle of paprika, sumac, or za’atar.
    - Chopped fresh parsley.
    - Whole cooked chickpeas or toasted pine nuts.
  • Serve immediately with warm pita bread, crunchy vegetables, or crackers. This creamy, dreamy hummus is sure to impress!
